Peanut soup


½ onion
2 garlic cloves
1 tbsp of ginger
1.5L vegetable stock
2 tbsp of tomato paste
3 tbsp of peanut butter
2 tbsp of Surinam Soul
A handful of kale
Top with chopped peanuts

Cut the onions and garlic finely, clean the ginger with a spoon and grate.
Add onion, garlic and ginger into a soup pot and pour in the vegetable stock.
Cook for 15 minutes on medium heat.
In a separate bowl mix tomato paste, peanut butter and a tablespoon of Surinam Soul.
Add the stock to the bowl and whisk until combined.
Pour the stock back into the soup pot.
Add in the kale and cook for another 5 minutes before serving.
Put the chopped peanuts and a drizzle of Surinam Soul on top.
