Saus.Guru’s latest addition to the Pitmaster Collection is the Late Apple Harvest & Old Orchard Spice Blend, a brand-new sauce and rub combination. Like all products within the Pitmaster Collection, the rub is specifically tailored to complement the sauce, similar to wine pairing with food.

The new Old Orchard Blend – Rustic Flavor Elements is composed of a balanced mix of herbs, spices, and umami-rich ingredients inspired by the flavors of ‘Rural Normandy.’ By adding Demerara sugar to this blend, you can elevate your dishes to a higher level.

For best results, use this Dry Rub in conjunction with the matching competition sauce, Late Apple Harvest, from the same Pitmaster Collection. Together, they form an excellent flavor duo for perfect seasoning of herbs and spices during various cooking processes, particularly with typical American low and slow BBQ, South African Braai, controlled grilling, such as rotisserie, plancha-grilling, Dutch oven applications, and sous vide preparations.

It is ideal for use with a broad range of products, including poultry, pork, lamb, beef or roasts, and stewed dishes made from various types of game, such as deer, wild boar, and hare, as well as wild birds such as duck, pheasant, partridge, and rabbit. Even combinations with white fish, salmon, lobster, and shrimp, especially during warm summer days, are worth considering.

Tip: Cook with interesting vegetables more often to diversify your dishes. Think of a wide range of roasted vegetables, slow or fast, such as celeriac, eggplant, zucchini, peppers, onions, regular and sweet potatoes, (pointed) cabbage, and many more.

By dissolving in water (50 grams/L of warm water) and adding 7 grams of sea salt, you can quickly make the perfect brine. This is perfect for marinating meat, fish, poultry, and vegetables prior to cooking techniques such as smoking, low and slow roasting, or sous vide preparation.

The specific cut of the ingredients in the Old Orchard Blend ensures a perfect distribution of the herbs and spices. The result after preparation is a balanced crust (bark) that is essential for typical American BBQ dishes.

The Pitmaster Collection – The ultimate Rub & Sauce combination
The Story

pit-ma-ster [‘pĭt-mæ-ster]. Noun (plural pitmasters)
Someone who operates a barbecue pit. Sometimes an expression of respect for someone skilled in barbecuing.

This collection has been developed together with pitmasters, specifically for pitmasters and BBQ enthusiasts with an above-average interest in flavors and BBQ preparations.
To our knowledge, the Pitmaster Collection is the first series of competition-level flavor enhancers in which Dry Rubs and BBQ Sauces are developed and flavor-matched to each other.
Just like wine and food are matched in better restaurants.
With Saus.Guru’s Pitmaster Collection, you have a unique series of products in your hands.

The sauces in the Pitmaster Collection are based on the competition sauces typically used in American Style BBQ competitions, but with a twist.
The chefs of Saus.Guru have tailored the flavors of this collection to the European, more refined palate.
The sauces in the Pitmaster Collection are not as overwhelmingly acidic as many of the other sauces in this segment.
They are also not as extremely sweet.

All of this is done to bring more balance to the perception of their overall flavor and to give all of the flavor characters in the sauce the space they need to be well-experienced.
Additionally, they are slightly thicker than what is usually found on the market.
This is very useful for the end-user when glazing, coating, and the well-known “candy-ing” of products in Low & Slow Cooking.

The Pitmaster Collection Dry Rub Series is composed of the best ingredients.
Top-class spices that have been processed with extreme precision into particles of the correct size (schnitt).
This ensures an optimal distribution of the particles and therefore the perfect ‘bark’.
These rubs also have a better salt balance to not overpower the flavors of the herbs and spices.

Serving suggestions

Use this Dry Rub preferably together with the matching competition sauce, the Late Apple Harvest, from the same Pitmaster Collection. Together, they form an excellent flavor duo for the perfect layering of herbs and spices during different cooking processes. Think of typical American low and slow BBQ, South African Braai, controlled grilling such as rotisserie, plancha-grilling, Dutch oven applications, and sous vide (preparation) techniques. It is ideal in combination with a wide range of products. Think of poultry, pork, lamb, veal, roasts, and stews of so-called non-standard beef cuts and preparations of various game species such as deer, wild boar, and venison, game birds such as duck, pheasant, and partridge, and wild hare and rabbit. You can even think of combinations with white fish, salmon, lobster, and shrimp, especially during warm summer days. Tip: Cook more often with interesting vegetables for a beautiful diversity of dishes. Consider a wide range of (slowly) roasted vegetables such as celeriac, eggplant, zucchini, peppers, onions, regular and sweet potatoes, (pointed) cabbage, and much more. Dissolved in water (50 grams/L warm water) and with the addition of 7 grams of sea salt, you can quickly make the perfect brine. Perfect for marinating meat, fish, poultry, and vegetables prior to cooking techniques such as smoking, low and slow roasting, or sous vide preparation.

Instructions for use

For a perfect ‘bark’, massage or sprinkle this Dry Rub onto the best cuts of meat, fish, and poultry, as well as your favorite vegetables. Use Saus.Guru’s Smooth Piccalilly as a binding base to ensure the rub sticks well.
