Saus.Guru’s latest addition to the Pitmaster Collection is the Late Apple Harvest & Old Orchard Spice Blend, a brand new sauce and rub combination where, as with all products in the Pitmaster Collection, the rub is tailored to the sauce, like wine to food.
The Late Apple Harvest Sauce is a typical Memphis, Tennessee-style sauce. A fresh and fruity BBQ sauce based on apples, packed with flavor from a rich blend of herbs, spices, and umami components inspired by the flavors of ‘Rural Normandy’. This sauce has the typical flavor characteristics and technical aspects that are very popular in the BBQ competition circuit.
It is an accessible and yet surprising sauce due to its balanced flavor composition. It is ideal for use with a wide range of products, such as poultry, pork, lamb, beef roasts, and stews made from less common beef cuts and preparations of various game meats, such as deer, wild boar, and venison, as well as game birds such as duck, pheasant, and partridge, and game such as rabbit and hare. You can even think of combinations with white fish, salmon, lobster, and shrimp, especially delicious during warm summer days.
Preferably, use this sauce together with the matching Old Orchard Blend – Rustic Flavor Elements spice mix. Together, they form an excellent flavor duo for the perfect aging of herbs and spices during various cooking processes. Think of typical American low and slow BBQ, South African Braai, controlled grilling, such as with a rotisserie, plancha grilling, Dutch oven applications, and sous vide preparations.
Tip: Cook more often with interesting vegetables for a nice diversity of dishes. Think of a wide range of (slow or fast) roasted vegetables, such as celeriac, eggplant, zucchini, peppers, and onions, normal and sweet potatoes, (pointed) cabbage, and much more.
The Pitmaster Collection – The ultimate Rub & Sauce combination
Pit-mas-ter [‘pĭt-mæ-ster]. Noun (plural pitmasters)
Someone who operates a barbecue pit. Sometimes an expression of respect for someone skilled in barbecuing.
This collection has been developed in collaboration with pitmasters, especially for pitmasters and serious BBQ enthusiasts with above-average interest in flavors and BBQ preparation.
To the best of our knowledge, the Pitmaster Collection is the first competition level series of flavor enhancers in which Dry Rubs and BBQ Sauces are developed and taste-matched together, much like wine and food pairing in fine dining restaurants.
With Saus.Guru’s Pitmaster Collection, you have a unique series of products in your hands.
The sauces in the Pitmaster Collection are based on the competition sauces typically used in American Style BBQ championships, but with a twist.
The chefs at Saus.Guru have tailored the flavors of this collection to the European, more refined palate.
The sauces in the Pitmaster Collection are not as overwhelmingly sour as many of the other sauces in this segment. They are also not extremely sweet.
All of this is done to bring more balance to the perception of their overall flavor and to allow all the flavor characters in the sauce to be experienced fully.
Moreover, they are slightly thicker than what is commonly found on the market.
This is very useful for the end user when glazing, coating, and candy-ing products during Low & Slow Cooking.
The Pitmaster Collection Dry Rub Series is composed of the best ingredients.
Top-quality spices are processed with extreme precision to achieve the proper size (schnitt) for optimal particle distribution and the perfect ‘bark.’
These rubs also have better salt balance to avoid overpowering the flavors of the herbs and spices.
