Saus.Guru’s latest addition to the Pitmaster Collection is the Late Apple Harvest & Old Orchard Spice Blend, a brand new sauce and rub combination where, as with all products in the Pitmaster Collection, the rub is tailored to the sauce, like wine to food.

The Late Apple Harvest Sauce is a typical Memphis, Tennessee-style sauce. A fresh and fruity BBQ sauce based on apples, packed with flavor from a rich blend of herbs, spices, and umami components inspired by the flavors of ‘Rural Normandy’. This sauce has the typical flavor characteristics and technical aspects that are very popular in the BBQ competition circuit.

It is an accessible and yet surprising sauce due to its balanced flavor composition. It is ideal for use with a wide range of products, such as poultry, pork, lamb, beef roasts, and stews made from less common beef cuts and preparations of various game meats, such as deer, wild boar, and venison, as well as game birds such as duck, pheasant, and partridge, and game such as rabbit and hare. You can even think of combinations with white fish, salmon, lobster, and shrimp, especially delicious during warm summer days.

Preferably, use this sauce together with the matching Old Orchard Blend – Rustic Flavor Elements spice mix. Together, they form an excellent flavor duo for the perfect aging of herbs and spices during various cooking processes. Think of typical American low and slow BBQ, South African Braai, controlled grilling, such as with a rotisserie, plancha grilling, Dutch oven applications, and sous vide preparations.

Tip: Cook more often with interesting vegetables for a nice diversity of dishes. Think of a wide range of (slow or fast) roasted vegetables, such as celeriac, eggplant, zucchini, peppers, and onions, normal and sweet potatoes, (pointed) cabbage, and much more.
