Black Garlic, also known as fermented garlic, is a true delicacy. White garlic bulbs are heated at a low temperature for several weeks, causing them to slowly turn dark brown/black. Along with the color change, the taste and aroma of the cloves also change. The sharpness of fresh garlic is now transformed into a much milder garlic flavor with rich soy sauce-like undertones and depth. Technically, this is not a fermentation process, but rather falls under the so-called Maillard effect, a reaction between sugars and amino acids.
